Meal Prep Duck Egg Casserole

Dr. Ryan and I are always meal prepping and trying to save time cooking during the week. One way that we really try to save time and start the day off right is by meal prepping our breakfast. We both have gotten our allergies tested and chicken eggs were on our list!
Why Duck Eggs?
Food allergies are a common hurdle, and for those sensitive to chicken eggs, finding a nutritious alternative can often be a tall order. Duck eggs have surfaced as a viable option for some. Allergic reactions to eggs are primarily triggered by proteins present in them. Chicken eggs harbor four main allergenic proteins: ovomucoid, ovalbumin, ovotransferrin, and lysozyme. Duck eggs, on the other hand, have a slightly different protein structure which might be less likely to trigger an allergic response in some individuals. Even minor differences in protein structure can significantly impact how the human immune system reacts to these proteins.
Duck eggs are slightly larger and have a higher yolk-to-white ratio than chicken eggs, giving them a creamier texture and deeper flavor. They're also packed with protein, omega-3 fatty acids, and essential vitamins like B12 and D—great for starting your day strong.

Duck Egg Breakfast Casserole Recipe (Quick Overview):
Ingredients:
6-9 duck eggs (depends on the size)
1/2 cup dairy-free milk or goats milk
1 cup cooked breakfast sausage or bacon
1 cup shredded goat or sheep cheese
2 cups diced vegetables (onion, bell pepper, spinach, mushrooms)
Salt and pepper to taste
Optional: herbs like thyme or chives for added flavor
Instructions:
Preheat your oven to 375°F (190°C).
In a mixing bowl, whisk the duck eggs and milk until well combined.
Stir in the cooked meat, vegetables, cheese, and seasonings.
Pour the mixture into a greased 9x9-inch baking dish.
Bake for 30–35 minutes, or until the center is set and the top is golden.
Let cool slightly before slicing and serving.
